Meg’s Cheddar is Better Wafflewiches

Ingredients

  • 4 small slices wheat bread
  • 2 teaspoons soft butter or margarine
  • 1/2 cup shredded Omega Farms Mild Cheddar Cheese (2 oz.)
  • Optional: 2 teaspoons apple butter, 1 tablespoon crumbled bacon

Instructions

  1. Spread a little butter on one side of each bread slice.
  2. Put the bread butter side down on a cutting board and sprinkle half the cheese on each bread slice. Add scoop of apple butter or crumbled bacon, if desired.
  3. Put the remaining bread on top (butter side up).
  4. Put in a hot waffle or Belgian waffle maker and cook for about 3 to 5 minutes or until bread is toasty and cheese is melted. Serve warm.

Variation : Holiday Sandwiches

  1. Using a cookie cutter, press hard on 2 bread slices to cut a holiday shape in the bread.
  2. Spread a little butter on one side of each slice of bread.
  3. Put the uncut bread butter side down on a small baking tray and put the cheese on top. Add scoop of apple butter, if desired.
  4. Put the cut out bread slice on top.
  5. Bake in the oven or toaster oven at 400°F for 5 minutes or until bread is toasty and cheese is melted. Serve warm.

Makes 2 sandwiches.
