Meg's Cheezy Breakfast Quesadezzy
Ingredients
- 2 eggs
- Salt
- 2 (6-oz.) flour tortillas
- 1/2 cup shredded Omega Farms Monterey Jack Cheese
- Optional: chopped red and green bell pepper, sliced green onion tops, salsa
Instructions
- Beat eggs in a small bowl with a fork. Add a little salt.
- Put a small non-stick skillet over medium heat on the stove. When hot, add eggs. Cook and stir for a few minutes until eggs are cooked. Remove from heat.
- Heat a medium size non-stick skillet over medium heat.
- Put tortillas in skillet and sprinkle with cheese.
- Cook until cheese is melted then top with eggs and any other fillings you like.
- Fold in half and eat.
Makes 2 large or 4 small servings.
