Meg’s a Milkin’ Banana Pancakes
Pancakes
- 1 cup complete wheat pancake mix (just-add-water kind)
- 3/4 cup Omega Farms 1% Low Fat Milk
- 1 medium ripe banana, peeled and mashed
- 1/2 teaspoon cinnamon
Topping
- 1 cup Omega Farms Low Fat Vanilla Yogurt
- 1 medium banana, peeled and sliced
Instructions
- Mix all pancake ingredients together in a medium size bowl.
- Heat a large non-stick skillet over medium heat.
- Pour 2 tablespoons of batter for each pancake into the pan.
- When there are bubbles on top that start to pop, turn the pancakes with a spatula.
- Cook for a minute or more, and then remove from heat.
- Stir together yogurt and banana slices in a small bowl. Spoon over pancakes, and serve.
Makes 4 servings.
